回收芳香物质,也是果蔬汁浓缩过程中不可缺少的工艺环节,要使果汁具有原来的新鲜芳香,制造果汁时应在不损坏芳香物质的前提下,对它们进行分离提取,并以浓缩的形式保存,然后再回加到果汁中,使之尽量接近水果在食用时所具有的香气。传统的分离方法有吸附法、蒸汽蒸馏和溶剂提取等方法,但是这些方法存在一些会影响产品品质的缺陷,如提取剂和吸附剂在纯化/吸附过程中会造成污染;高温和氧化作用会破坏芳香物质;高能耗以及应用具有限制性。而将膜分离技术应用于芳香物质的回收可以克服这些缺陷,如蒸发浓缩果汁时,芳香物质几乎全部消失了,速冻浓缩时,芳香物质只保留了8%;采用反渗透法浓缩果汁时,芳香成分可保留30%-60%,且脂溶性部分比水溶性部分保留得更多。

目前膜分离技术回收芳香物质的应用主要有反渗透和超滤技术。
